Pacific Halibut is the world's largest flat fish.  The current Alaska record is 459 pounds.  Huge Pacific Halibut, sometimes called "Barn Doors", can reach a length of over 8 feet and a width over 5 feet.  Alaska Halibut has a mild, sweet, and delicate flavor with a firm texture.  Their flesh is pure white when cooked and has a large flake.  Because of its mild flavor, Halibut can easily absorb other flavors which allows it to pair well with multiple enhancements or wines.
